Matcha and Strawberry Ice Cream

I’m going to show you how to use matcha and strawberry 3 ways because they are that good together.  They are so good together that I call them flavor BFF’s.  The earthiness of the matcha really comes out when paired with the strawberry.  The sweetness of the strawberries really shine when paired with the matcha.  I don’t know how or why, but they are oh so good together.

This recipe is adapted from Vanelja’s book N’ice Cream found on page 73.  It’s vegan and creamy and easy to make.  All you need is a blender and a loaf tin.  No ice cream maker needed as the macadamia nuts make it creamy alongside the coconut milk.  Macadamia nuts are quite expensive so you can swap it out with raw soaked cashews.  Ideally you need to the soak cashews overnight, if you are in a hurry you can boil some water and let it soak for an hour before blending.  The beauty of using macadamia nuts is that no soaking is needed.


1/2 Cup macadamia nuts (or sub soaked cashews)

1 14 Ounce can full fat coconut milk

1 Tablespoon matcha

2 Tablespoons maple syrup

1/2 Teaspoon vanilla extract

6 Strawberries hulled and cut into quarters


Combine all ingredients in a blender except strawberries and blend for 2-5 minutes depending on how powerful your blender is.  Line a loaf pan with parchment and pour the matcha ice cream in.  Then drop in the strawberries randomly to form a nice pattern.  Freeze for 4-6 hours and cut into bars to serve.  Can be cut up to 12 bars.

1 Cup full fat coconut milk

1 Tablespoon maple syrup

2 Tablespoons Chia

1 Teaspoon matcha

1/4 Teaspoon almond extract

Handful of strawberries diced


Place coconut milk and maple syrup in a bowl and mix to take out lumps add in the chia seeds and mix well and place in refrigerator overnight to bloom.

To serve place half the chia pudding in a separate bowl and mix in the matcha, after fully incorporated add in the almond extract.  Layer the matcha and coconut pudding in a cup and place diced strawberries on top.  Serves 4.

Strawberry Layer

4 Strawberries

1 Tablespoon Water

Matcha Layer

1/2 Cup water

1/2 Teaspoon matcha

1/2 Teaspoon maple syrup

Mylk Layer

1 Cup crushed ice

1/4 cup non dairy milk of your choice

16oz glass


Place strawberries and water in blender and blend until smooth.  Pour into your glass filled with crushed ice then rinse out the blender and place the matcha, water and maple syrup and blend until incorporated.  Pour the matcha over the strawberry puree and let sit for a moment and then pour your mylk on the top and enjoy!  This serves one.
