Super Simple Almond Gelato with Fruit Salad

All you need is some almond flour and date syrup and you have got super simple Almond Gelato.  Serve it with some fruit on the side for the perfect summer time treat.

The Back Story

Okay.. this recipe came about from me wanting to recreate this almond jelly my Aunt would make every time we had a party.  As I grew up with it, I always thought it was a Filipino recipe.  It’s actually not.  I found the packet that my Aunt used to make her almond jelly with fruit salad and it’s from China.

I love the flavor, but wanted something more icy and less sugary than using canned fruit salad.  So I came up with my version of Almond Gelato.

How to Make Almond Gelato

Making it is quite simple.  It all starts in the food processor to make some almond paste.  All you need is two cups of almond flour, half a cup of date syrup, a tablespoon of vanilla paste, a teaspoon of almond extract and a pinch of salt.  You process it all until it comes together in a ball.

To make it into the gelato all I did was add in two cups of filtered water and processed it until it was fine and smooth.  You can go the extra step of taking out the pulp and squeezing out the almond water, but I did it the lazy way.  Leaving in the almonds also makes it more creamy.

If you have an ice cream maker you can pour it in and mix it until it gets to that soft serve ice cream texture.  If not you can just place it in a container.  I like using a loaf tin and just mix it every 30 minutes until it sets.

The gelato is pretty good on it’s own, but adding some summer fruit like mangoes and cherries is also a great idea.  It also add a nice pop of color.  The cherries are home made maraschino cherries that I found at my local farmers market.  I love how they are not sweet and still retains the fresh taste of the cherries.

To serve, two scoops is best and then garnish with some summer fruit and flowers.  Enjoy!

Ingredients

  • 1 Cup Almond Flour
  • 1/2 Cup Date Syrup
  • 1 Tablespoon Vanilla Paste
  • 1 Teaspoon Almond Extract
  • 1/4 Teaspoon Pink Himalayan Salt
  • 2 Cups Filtered Water
  • Ice Cream Maker Optional

Instructions

  1. Place the almond flour, date syrup, vanilla, almond extract and salt in a food processor.  Blend until it comes together into a ball about one minute

  2. Add in two cups of filtered water and process until its was fine and smooth.

  3. If you have an ice cream maker you can pour it in and mix it until it gets to that soft serve ice cream texture. If not you can just place it in a container. I like using a loaf tin and just mix it every 30 minutes until it sets.
