Poached Apples

Rose Poached Apples with Rosewater Reduction

Ingredients

  • 4 small to medium sized green apples Golden Delicious if you can get them
  • ½ bottle rose
  • ¼ cup Cassava Sweetener
  • 1 cinnomon stick
  • 1 clove
  • 1 Star Anise
  • 1 tablespoon dried rosebuds
  • parchment paper
  • 1 tablespoon rosewater

Instructions

  • Peal all the apples and leave the steam on and place in a sauce pan. Pour over the rose until all the apples are covered and then add in the cassava sweetener, cinnamon stick, clove, star anise and dried rosebuds.
  • Take parchment paper and cut into a circle to fit inside the sauce pan. Place on top of the apples and poaching liquid (this helps the apples stay in the liquid for even poaching). Bring to a boil and then turn down the heat to low simmer for 30 minutes.
  • After 30 minutes check the to see if the apples have softened and cooked through. The ideal is to have them soft, but not mushy.
  • Take the apples out and set aside. Take out the cinnamon stick, clove, star anise and dried rosebuds and turn up the heat to medium and let simmer for about 10 minutes or until the liquid has reduced to almost half.
  • Let cook to room temperature and then add in the rosewater.
  • To serve place each apple on an individual plate and spoon over the rosewater reduction and sprinkle with some extra dried rose buds. Top each apple with a single lemon balm or mint leaf and enjoy! You can also serve it with some vanilla ice cream or coco whip.
